Crock Pot Sweet and Sour Meatballs

Crock Pot Sweet and Sour Meatballs is a twist on a classic food. Sweet and tangy sauce over rice and homemade meatballs, heaven on a plate. This dish is great for any family looking to share a meal together. Bring dinner time back to families where you are able to sit down and enjoy each others company.
I made those wanting something different and this dish was a major hit. It makes a big pot, so you will have leftovers. This would be great to serve on cold days, game day or any day! It is a multitude of flavors ready to make you roll your eyes in the back of your head and go, “Oh, yeah….”.
Sweet and Sour Sauce Ingredients:
2 cans of pineapple chunks with juice (20 oz.)
1 yellow bell pepper
1 red bell pepper
1/2 cup ketchup
2 tbsp of low sodium soy sauce
1 1/2 tbs sriracha hot sauce
sliced green onion to garnish
brown rice, steamed or boiled for serving
meatballs (homemade: recipe below)
1 cup rice vinegar
3 tbsp corn starch
1/2 cup brown sugar
Meatballs Ingredients:
4 lbs of hamburger (80/20)
1 1/2 cups Panko Italian Bread Crumbs
1/4 c milk (whole)
1/2 c heavy cream
1/2 c fresh Italian parsley (chopped)
1/4 tsp of salt and pepper
1/2 tsp red pepper flakes
3 eggs
2 tbsp olive oil
Directions:
In a large skillet over medium heat, add your brown sugar, vinegar, ketchup, soy sauce and pineapple juice from the can. Bring all ingredients to a boil. Mix in the cornstarch into the sauce, whisking to get out all the lumps. Add pineapple and diced bell peppers. Stir as the sauce comes to a boil and add the sriracha. Mix well so it doesn’t burn. Lower heat and keep mixing.
To make your meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. If you desire them a little bigger that is OK too. Place your rolled meatballs onto lined baking sheet. Put your baking sheets in the refrigerator for 10 minutes to firm up.
Meatballs:
Brown your meatballs, you will have to heat the olive oil in a large skillet over medium heat. Add your rolled meatballs in batches, making sure not to overcrowd your skillet. Cook, turning the meatballs to make sure they brown all over, about 5 to 10 minutes per batch. Drain on paper towels. Add to crock pot, your meatballs will not fully cooked, but that is OK. Cover meatballs with your thickened sauce and put lid on and let cook on high for a couple of hours. NOTE: If your meatballs are raw when you put them in the crock pot, let them cook in the crock pot for 2 to 4 hours on high. Depending on how big you make them depends on how long it will take them to cook.
Serve with rice, white, wild or brown, your choice. Serve meatballs over the rice and garnish with chopped green onions. Enjoy the deliciousness of this dish. The sauce has a little bit of heat to it but doesn’t take away from all the flavors!
