Mascarpone Cheesecake Stuffed Strawberries

Mascarpone Cheesecake Stuffed Strawberries…let that roll off your tongue for a moment. YUM! The juiciness of the strawberry, creamy filling of the cheesecake and the pure sin of it all. What could be better? Make the delicious strawberries for your special someone this Valentine’s Day or any day you want someone to know how much you love them!
Ingredients:
1 8 oz. package Mascaropone Cream Cheese, softened (room temperature)
1/2 cup confectioners sugar
1/2 tsp vanilla extract
1 pint fresh strawberries, hulled and cored
1 semi sweet Ghirardelli chocolate bar
Directions:
Beat Mascarpone cream cheese, confectioners’ sugar, and vanilla extract together in a bowl until smooth. With a spoon, put your mixture into a piping bag or a resealable bag with a corner snipped.
Wash and pat dry your strawberries to make sure they are clean and with a paring knife, cut off the strawberry stems. Cut around the inside of your strawberry, hollowing out the inside of the strawberry slightly. This will create a well for the cheesecake to be piped in. (You can also do this with a small melon baller). Make sure you cut off a small portion of the tip of the strawberry, so that each of your strawberries can stand on their own. Place each on a large baking sheet or plate.
Fill the cored strawberries with the cream cheese mixture. For a little bit of garnish, add shavings from a Ghirardelli semi sweet chocolate bar on top.
(To do chocolate shavings: Hold bar of chocolate over the strawberries and grate the chocolate over a hand-held cheese grater. This should give your strawberries a light chocolate “dusting”. )
Refrigerate until ready to serve and enjoy the wonderful richness that is about to invade you taste buds!
