Chicken Marsala
Chicken Marsala: Meal of Champs is just that, a great meal to share with the champs in your family. Hearty chicken smothered in a rich sauce nestled in a sea of noodles. Yum! Anyone wanting something different to try, this is the dish for you! The chicken comes out moist and full of flavor and the sauce is superb. What a great menu item to serve the people you love!
Ingredients:
4 boneless chicken breasts
1/2 to 1 cup flour
1/4 tsp Mrs. Dash or salt
1/4 tsp pepper
1 1/2 tsp ground sage
1 tsp lemon juice
2 tbsp finely chopped shallot
2 to 4 tbsp olive oil
2 cloves of garlic, Chopped
1 cup of sliced mushrooms
1/2 cup of chicken stock or Marsala wine
1/4 cup chopped parsley
Serve over hot cooked pasta or brown rice if you desire.
Directions:
Between sheets of plastic wrap or waxed paper, flatten each chicken breast to 1/4 inch thickness. In a shallow mixing dish, mix your flour, salt, ground sage and pepper. Place the chicken in the flour mixture, coat and shake off the excess flour.
In large frying skillet, you need to heat oil over medium to medium high heat. Then you will need to cook your garlic, mushrooms, shallots and parsley in oil 5 minutes, stirring frequently so not to burn.
Add your chicken to the skillet. Cook the battered chicken about 8 minutes, turning once, until the chicken is brown. Add your wine and lemon juice. Cook 8 to 10 minutes or until chicken is no longer pink in center. Serve with pasta where you can add some of the juice to your noodles. Eat and Enjoy!
I added double to the batch because I have a larger family. We enjoyed Chicken Marsala a lot and I think we will be having this again!
