Wanting something “different” to eat for breakfast but you want something tasty and fulfilling? Classic Eggs Benedict is a perfect way to start your day! It has a multiple flavors and textures colliding onto your palate letting you savor every last morsel. What a great way to start the morning besides having a steaming hot cup of coffee right beside it. This, my friend, is living!
- 4 egg yolks
- 3 1/2 tablespoons lemon juiceÂ
- 1 pinch ground white pepper
- 1/8 teaspoon Worcestershire sauce
- 1 tablespoon water
- 1 cup butter, melted
- 1/4 teaspoon salt
- 8 eggs
- 1 teaspoon distilled white vinegar
- 8 strips Canadian-style bacon
- 4 English muffins, split
- 2 tablespoons butter, softened
To make Hollandaise: Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water.
Add the melted butter to egg yolk mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.
Preheat oven on broiler setting. To Poach Eggs: Fill a large saucepan with 3 inches of water. Bring water to a gentle simmer, then add vinegar. Carefully break eggs into simmering water, and allow to cook for 2 1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon and set on a warm plate.
While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler.
Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately.
I hope you enjoyed this recipe as much my family did. Bon Appetite!

That looks so good. I had no idea what to have for breakfast this morning, so I will definitely have to try this very soon.
I hope you like it. It took me a few go’s at doing the poached eggs because it was the first time I made them.
There is something about poached eggs on an english muffin with hollandaise sauce that feels so decadent. My favorite is florentine.
I was happy that it tasted as good as it looked! It was the first time eating it.
Poaching eggs has always been a struggle but it’s worth trying because of this recipe! I love eggs benedict, it’s definitely one of the best breakfasts one can have. What a way to start your morning, right?

This looks good. There are so many dishes I’m missing out on because I don’t eat eggs. My little family is full of egg eaters though!

I love Eggs Benedict but I am always afraid to try and make them. This recipe seems simple enough and I might take the chance and try to make my own.
The only “hard” part was the poached eggs and that is because I never made them before. Good luck and tell me how yours turned out!
I haven’t made this for many years. I bet my teen is old enough now to appreciate it though. I may give it a go for her soon.
I hope you teen likes it! They are very good!
I have never tried preparing eggs benedict in my life. For one, I don’t cook and two, I am not really well versed with kitchen, cooking stuff. But this meal certainly looks very filling, perfect for breakfast.
i honestly didn’t even know you could make eggs that way. it looks fantastic!
They are a a little difficult when you first try to make them but you get the hang of it. The dish is awesome!
I’m personally not a fan of poached eggs but your presentation in the photos looks great. You also did a great job explaining step by step the recipe. Thanks for sharing!
My husband would love this recipe. I would eat it without the bread. It looks delicious.
It was great! It was very filling!
i am truly an egg lover. lol. and eggs benedict is one of my favs. this looks great.
What a delicious way to wake up in the morning! Eggs benedict are a favorite in my house but I get nervous with using undercooked yolks because of a past bout of salmonella. I like to buy the pasteurized eggs from Sprouts, they cost a bit more but safer 🙂
Yummy, I will have to pass this onto my boyfriend! He loves a good eggs benedict.
Let me know how he likes the meal!
