Dinner Time with Spiced Beef Brisket
Dinner Time with Spiced Beef Brisket is a great dinner to have in the cold months Boston. Throw it in the crock pot and leave it while I tend to my newborn daughter is a great. A couple of hours and it’ll be done and ready for when my husband comes home from work. Since I have Celiac disease, I try not to have much or any gluten in my diet.
Celiac disease is a genetic autoimmune disorder where the ingestion of gluten leads to damage in the small intestine. So when I try to eat anything with gluten, it causes serious stomach pains. I have learned to cook a lot of different things to help ease and cope, Spiced Beef Brisket is one of those meals.
Ingredients:
1 3 1/2 to 4 lb beef brisket
2 cups water
1/4 c Ketchup
1 envelope of onion soup mix
2 tbsp Worcestershire sauce
2 tsp cinnamon
1/2 tsp bottled minced garlic
1/4 tsp pepper
1/4 c cold water
3 tbsp Gluten free flour
1 bag of baby carrots
6 medium to medium-large potatoes, cut in 4ths
Directions:
(NOTE: I also coated the beef brisket in oil salt pepper and gluten-free flour than browned all sides before putting it in crock pot.) Place the brisket in the crock pot. If you have to cut it to make it fit, that’s OK. Set your crock pot on low heat.
In a large bowl, combine Ketchup, 2 cups of water, soup mix, cinnamon, Worcestershire sauce, garlic, and pepper. Pour your mixture over brisket in crock pot. Cover and cook on low heat for 10 to 11 hours or on high heat for 5 to 5 and a half hours. (I turned mine up on high so it would be done when my husband came home.)
At the halfway mark add your potatoes and carrots and let it finish cooking.
Remove beef when done and plate on a serving platter. Cover to keep warm. To make gravy you can take some of the juices from the crock pot; put in a sauce pan and add corn starch to make a thickened roux. Turn on stove to a medium heat and make sure you whisk to keep the gravy from burning to the bottom. Cook and stir until bubbly and the gravy has thickened.
Slice beef add to your plate, add potatoes and carrots, and top with gravy.
