Everything But The Kitchen Sink Soup

Everything But The Kitchen Sink Soup is one of those meals you have a taste for something but really don’t know what for. I don’t know about you but I have those days. So when I do, I make this soup. This soup is a hearty, stick to your ribs type of soup that smells so good when it’s cooking. It’s great for cooler to snowy days. Sit down with the family and enjoy this delicious soup and talk about each others day.
Ingredients:
2 lb hamburger
1 lb bacon, cooked and crumbled
1 sweet onion
1/2 to 1 whole bag baby carrots
2 stalks of leeks, washed and cut
1 tsp basil
1 tsp parsley flakes
4 c chicken broth, unsalted
4 lbs red potatoes, diced
1/4 c flour
2 c cheese
1/2 c heavy cream
3/4 tsp salt
1/2 tsp pepper
1 small container sour cream
1 can diced tomatoes, juice drained
8 oz creamed cheese
3 to 4 garlic cloves, minced
1 green bell pepper, diced
pinch of red pepper flakes
1/2 c ketchup
1/2 tbsp dry mustard
2 tbsp butter
1/2 tbsp caraway seeds
Directions:
In a large skillet over medium heat, cook beef and sweet onion together until hamburger is no longer pink and onions are transparent; drain meat mixture and set aside.
In a large stock pot add potatoes, beef mixture and broth; bring to a boil. Reduce the heat and simmer. Cover until potatoes are semi tender, 5 to 6 minutes. Add carrots, leeks, tomatoes, seasonings, and crumbled bacon. Cover and continue to cook.
In a smaller skillet, melt butter. Add flour and cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir for about 2 minutes. Reduce heat to low setting. Stir in cheese, creamed cheese, and heavy cream. Cook until cheese melts and the soup becomes creamy looking. Remove from heat. Blend in sour cream. Mix well.
Serve with shredded cheese and green onions.
