Fried Pepper and Sausage Potatoes

Try this old time classic Fried Pepper and Sausage Potatoes for breakfast, brunch, lunch or dinner which will fill your and your family’s bellies with pure delight! This meal will make you think Thanksgiving came early in your home. I hope you enjoy this recipe as much as my family!
Ingredients:
6 Red Potatoes (medium to large)
2 package Kielbasa
1 medium sweet onion
1 green bell pepper
1 orange bell pepper (you can use a red bell pepper as well)
3 garlic cloves
2 teaspoon Mrs. Dash
pepper to taste
Oregano
Italian seasoning
Olive oil for frying (I would highly recommend trying Parmesan Garlic Olive Oil from The Wild Olive. This stuff takes it to a whole new level!
Heat your olive oil in a large skillet on medium to low-medium heat. Slice your red potatoes into thin pieces, like you would if you were making Au gratin or thicker fried potato chips. Place them in the oil and sprinkle with garlic, Mrs. Dash, oregano, Italian seasoning, and pepper. Let them sit for about 15 to 20 minutes, without stirring them. Flip the pieces of potato over so the other side can brown and turn crispy. Continue to do this until they have the desired golden brown, crunchy texture on the outside that you want.
While potatoes cook, cut up onion, bell peppers, and Kielbasa sausages. Place in the skillet with the potatoes until cooked through. Add cut up sausage and continue to cook until the sausage has a nice brown shell on it. When the potatoes are done, place them on a paper towel to remove the excess grease and return them to their pan. Let them set for about 5 minutes before serving them up.

I make a similar dish fairly often for dinner. I never thought of adding Mrs. Dash. I love the flavor of this seasoning mix!
