Ham and Cheese Crock Pot Soup

Hey it’s me, Rose! Just cookin’ up another crock pot special with Ham and Cheese Crock Pot Soup! This one is a personal favorite of both my husband and myself. It’s a hearty, comforting meal and is a great choice during the winter months when it’s cold outside. It’s also quite a dynamic recipe. You’ll find you can easily swap ingredients like meats, vegetables, or cheeses to work with whatever you happen to have on hand. This time around I used ham, potatoes, carrots, Velveeta, and cheddar.
Ingredients:
4 russet potatoes, peeled and chopped
1 small sweet onion, diced
3 cups chicken broth
1 cup shredded carrots
1 teaspoon dried basil
1 teaspoon dried parsley
1 1/2 cups cooked ham, chopped
3 Tablespoons butter
1/4 cup gluten-free flour
2 cups milk (I use Lactaid)
1/2 teaspoon salt
1/2 teaspoon black pepper
12 oz. Velveeta processed cheese, cubed
½ to 1 cup cheddar cheese, shredded
Directions:
Add vegetables, chicken broth, ham, and spices to the crock pot. Turn on high. Cook until all vegetables are tender. About 3 to 4 hours. Today I am using onion, potato, and carrots. But I have also used celery, peas, and green beans before. All taste great. You can also use beef or chicken as the main meat if that’s all you have on hand.
When vegetables are soft and cooked, start your roux using the butter, milk, and flour. Start by melting the butter in a saucepan over medium heat. When it’s melted completely, add the flour. Combine until smooth. Slowly whisk in the milk and stir continually and slowly until it thickens into a nice sauce.
Add the roux to the crock pot. Then add the cheeses and stir. You can use just Velveeta, just cheddar, or a mixture of both. If using just cheddar, up the cheddar to 2 cups. If using just Velveeta, up the Velveeta to about 16 oz.
Turn the crock pot off and let the cheeses melt for about 30 minutes. Stir again. Serve and enjoy!

After letting this soup cook for 4 and a half hours, give or take a few minutes, you’ll be grabbing your spoons and bowls! The smell alone will have your belly growling! This is also great with a little bit of French bread to make sure you grab every little morsel. You don’t want to waste a drop! Trust me!
