Having A Great Cheesy Tortilla Soup
With Pico De Gallo and Guacamole
The cold season is upon us, and most of us love soup! I ran across a recipe that I adapted from my best friend that lives in Boston. When this soup was cooking it filled the house with aromas that made Everyone’s belly grumble! It is so cheesy and good; you just want to rake your finger at the bottom of the bowl to make sure you got all of it!
Ingredients:
1 envelope chicken fajita seasoning mix
1 pound boneless skinless chicken breasts, diced
2 tablespoons canola or olive oil
1/2 cup chopped sweet onion
1/4 cup butter, cubed (unsalted)
1/3 cup corn starch
2 boxes of chicken broth, unsalted
1/3 cup canned diced tomatoes with chilies
1 1/2 cups cubed Velveeta cheese
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups half-and-half cream
1/2 cup shredded cheddar cheese
1 can black beans
pepper to taste
Directions:
Prepare your fajita mix according to package directions. Add chicken and marinate as directed with the mix. In a large pan, cook your chicken in oil until the chicken is not pink. Take chicken out of the pan and set aside.
In another large pan, sauté onions in butter until tender or transparent. Stir in your cornstarch until blended in with the onions. Gently stir in your chicken broth. Bring to a soft boil. Cook and stir for a couple of minutes or until it start to thickened and bubble. Add your tomatoes, Velveeta cheese and 1 cup Monterey Jack cheese. Cook and stir well until all cheese is melted.
Stir in cream and reserved chicken. Make sure to heat the liquid through and do not boil. Add your can of black beans. Stir gently until the soup is hot and sprinkle with cheddar and remaining Monterey Jack cheese; top with guacamole and Pico De Gallo. I like to add sour cream as well. Add chips on the side if you desire as well.
Look at that thick and cheesy goodness! Adding the Pico de Gallo and Guacamole makes it all that much better! Enjoy this soup with the family on a cold day and this recipe is great for ones who have Celiac disease or wanting to eat a little bit better, it is all gluten-free! Just add corn chips if you need that extra crunch! I hope you enjoy it!
