Do you ever want something fresh and light for a hot summer day? Try this awesome salad, Insalata Caprese. Insalata meaning: an Italian-style salad and Caprese meaning: denoting a salad of fresh mozzarella, tomatoes, and basil. You will not go wrong with having something so healthy and delicious!
- 1 large ripe tomato
- 1 sprig of fresh basil
- 1/4 lb fresh mozzarella cheese
- freshly ground black pepper to taste
- fine sea salt to taste
- extra virgin olive oil
- fresh spinach and romaine lettuce
- sliced almonds (optional garnish)
On a large plate, add your fresh greens on the bottom of the plate. Place the alternating and overlapping the tomato slices, mozzarella cheese slices on the greens. Drizzle with light olive oil and season with sea salt and pepper. Drizzle Balsamic Vinegar on top of tomato and mozzarella slices. Add fresh sliced basil and almonds to garnish.
Enjoy this lovely Insalata Caprese with a bit good Chardonnay and good company. You have a perfect afternoon sitting in the shade, chatting with the girls and having a great meal. Enjoy!
