Irish Potato and Leek Soup

Irish Potato and Leek Soup is great for the cold weather that’s coming in. You need something that’s hearty, filling and will warm you up. Something that will stick to your ribs. This is the perfect “cold” day soup! Veggies, bacon, and all the good stuff to keep your body going through the colder winds and snow.
Ingredients:
4 c unsalted chicken broth
1 1/2 c water
12 yellow potatoes
2 c shredded cabbage
1 leek, cleaned and diced
1 sweet onion, chopped
1 small bag of baby carrots, chopped
1 tsp salt
1/2 tsp caraway seeds
1 tbsp black pepper
1 1/2 c sour cream
2 bay leaves
1 lb bacon, cooked and crumbled
1/4 c fresh parsley, chopped
Directions:
In a large stock pot, combine your chicken broth, potatoes, cabbage, leeks, onion, carrots,salt, caraway seeds, pepper and bay leaf. Have your heat on medium, mix well and cover.
Cook on medium heat for about 30 minutes, add water and mix. Cover your pot and let it cook for about 15 to 25 minutes.
Remove your pot from the heat and take out the 2 bay leaves. Discard the bay leaves in trash. Remove a 1/2 cup of juice from your pot. In a medium-sized bowl add your liquid from the pot and sour cream. Whisk the ingredients together until well blended. Add your sour cream mixture, your cooked and crumbled bacon back in your stock pot. mix ingredients well. Add in fresh parsley, mix and serve.
Serve in a bowl and enjoy.
Note: I, personally, don’t like crunchy bacon. I cooked mine where it is cooked through and added it to the soup.
