Italian Flat Finger Sandwich Ingredients:
- 2 whole grain flatbread, naan
- 2 tbsp stone ground Dijon mustard
- 6 oz. Brie cheese
- 1 (6 oz) package Deli Italian meat (prosciutto, salami, capicola)
- 1 c arugula leaves
- 2 tbsp olive oil, divided
- 1/4 c lemon vinaigrette
- 1 tbsp basil pesto
Directions:
- Cut each whole grain flatbread in half lengthwise to make two equal halves (may be in irregular shapes). Spread the grainy mustard on one side of each piece.
- Cut Brie into 1/4 inch slices. Divide Brie slices on top of mustard on 2 halves. On top whole grain flatbread; evenly spread out meats and arugula leaves. Finish with remaining flatbread slices to make it into a sandwich.
- Preheat large, nonstick pan on medium heat for 2–3 minutes. Place 1 tablespoon oil in pan, then place sandwiches in pan. Brush flatbread sandwich tops with remaining 1 tablespoon oil. Cook 3–4 minutes on each side or until Brie has melted and the flatbread is crispy and brown. Combine vinaigrette and pesto in a bowl to the side.
- Remove sandwiches from pan. Cut the sandwich into small wedges. Drizzle with pesto vinaigrette (or serve on the side for dipping).
- Serve to friends and family.
