Keep Calm and Gobble Chicken and Cornbread Dressing
What a perfect way to sit down with the family and share a meal together! Now a days everyone is so busy with everyday life to stop and enjoy the little things in life-like a meal. This recipe has been in my family for generations and it will bring everyone to the family table when the dinner bell has rung. This is an all in one meal that will fill the bellies of those you love with good food and fill your ears with good conversation. I hope you will enjoy this as much as we have!
Ingredients:
1 whole yard bird, ( chicken ) boiled and picked off bone.
1 pan of cornbread (see our recipe)
1 box Chicken Broth (32 oz )
1 lrg can of condensed cream of chicken soup
1 lrg onion, diced
2 stalks of celery, cut fine
4-6 hard-boiled eggs, peeled and cut
2 tsp sage ( I like a bit more, so taste as you go)
1/2 tsp pepper
1/4 tsp salt or Mrs. Dash
4 tbsp chicken seasoning
Directions:
Heat oven to 400° . Spray 3-quart glass baking dish with cooking spray. Crumb your cornbread in the bottom of the pan. Start adding seasonings to your cornbread mixture. I find it easier, especially if you are cooking a lot of dressing to wash your hands extremely well and mix with your hand. (gloves will help)
Cut and dice your celery and onion. Add cut boiled eggs and mix very well. With your picked chicken you want to shred it while you are adding it to your mixture. mix as you go. You want to mix all the goodness together.
Now for the important part: Add your can of cream of chicken and mix. You will want it all over and sticky. Add your broth to this mixture. You need to have is very moist but not soupy. Mix the ingredients very well.
Make sure your mixture is even in the baking dish. Bake uncovered about 45 minutes or until bubbly and golden brown. Serve with gravy of your choosing. I, personally love Giblet Gravy!
