You can eat this and enjoy your meal without the worries about your waist line! You can make this for a light luncheon for some friends or for your family. This dish breaks up the humdrum way you make chicken salad and makes it fun to eat!
1 whole rotisserie chicken (Walmart traditional or Lemon pepper, works well)
4 cups red grapes (cut in half)
1/2 cups dried cranberries
1 whole red apple (diced, small pieces)
1/2 cup golden raisins
8 Large lettuce leaves
1 1/2 tbsp of Mrs. Dash Original
2 shakes of pepper
4 tbsp mayo (you might have to add more if you think your salad is dry)
1/2 cup and chopped Walnuts or pecans (optional)
4 stalks of green scallions or a half of a red onion diced (optional)
In a large bowl, peel off the skin the rotisserie chicken. Pick chicken meat off the bone, and
dice meat. Put meat in a large bowl with the grapes, raisins, dried cranberries, apple and mix together well. The last 2 ingredients are optional and depending on your tastes if you want to add. Serve on the large leaves of lettuce and enjoy! You can also plate this with quartered tomatoes, cut up cucumber or eat it plain. The choices are endless and all this dish needs is you to start eating!

That sounds like a delicious lunch idea. I love salad wraps 🙂
I love chicken salad and putting it together in a wrap would most certainly hit the spot for me. I actually have some left over chicken and might make this.
This sounds so easy and looks very delicious! Definitely going to make it for lunch.
My mother taught me how to make it when I went to visit her in Georgia. It is very simple and easy to put together! I hope you enjoy it!
Those look like a tasty way to eat more healthy. I love the flavors. I’ve been eating far too much junk lately!
This is exactly what I’m looking for. I need something that gives me protein, and less carbs. I love chicken salad sandwiches, so now what I’m trying to do instead of bread is lettuce.
Bread or lettuce, you will not go wrong! Less carbs is a great way to go but I love bread way too much!
I love fruit in chicken salad. I do mine with apples.
This sounds really good. I’ve never tried salad wraps before. I’ve been eating more healthy and I’ve been looking for more recipes, so I’ll have to try these out.
