Sweet Potato Casserole
Sweet Potato Casserole, I believe is my all time favorite side dish during the holiday season. Family is getting together, enjoying each others company, swapping stories of the old days, and eating great food. I do not think you will go wrong with this sweet potato casserole dish.
Whatever your family is doing for either Christmas, Thanksgiving, picnics, bbq’s, or just watching a football game, this dish will be a hit! People will go back for more and you will have everyone asking for your recipe! Exciting!!! So sit back, unbutton the top button of your jeans and dig in…there may not be 2nd’s!!!!
Ingredients:
1 can of Bruces Yams Sweet Potatoes (2 lbs)
1/4 cup milk
2 eggs
1/4 cup butter
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1/4 cup milk

TOPPING:
1 cup brown sugar
2 1/2 cups Special K Cereal
1/2 cup chopped nuts (I like to use pecans chips)
1/3 cup melted butter
2 1/2 cups Special K Cereal

Drain the fluid off your yams before you put them in your large bowl. Combine all ingredients, yams, sugar, vanilla, cinnamon and vanilla and blend mixture together well. Once mixed well pour your mixture into your casserole dish. In a medium bowl, you will mix the melted butter and brown sugar together. Make sure the mixture is blended together well. Add Special K Cereal and nuts in the brown sugar mixture and spoon topping over the sweet potato mixture. Cook for 45 minutes at 350 degrees. It will get a deeper golden brown when done!
