Many families get into the same routine about what they want to fix for dinners day in and day
out. If you are like me, you want something different to eat! Taco Casserole is a favorite dish in
my home and it has loads of flavor that is not lacking. So, now you will be able to have an idea
and a great dish for supper!
Taco Casserole:
- 1 pound ground beef
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet onion
- 1 envelope taco seasoning
- 1/2 jar salsa
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14-1/2 ounces) Mexican diced tomatoes, drained
- 6 flour tortillas (8 inches)
- 1 can (16 ounces) re-fried beans
- 6 cups shredded Mexican cheese blend or Colby Jack shredded cheese
- sour cream (for an extra bonus)
- sliced black olives (optional)
In a large skillet, cook the beef, green peppers and onions over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans,salsa and tomatoes. Simmer, uncovered, for 10 minutes or until the mixture thickens.
Place two tortillas in a greased 13×9-in. baking dish. Spread with half of the re-fried beans and beef mixture; sprinkle with 1 cup cheese or until the layer is covered. Repeat with other layers. Top with remaining tortillas and cheese.
Cover and bake at 350° for 25-30 minutes or until heated through and cheese is melted and bubbly brown.

I’m sure this is a hit with the kids, since it’s tacos. Who doesn’t love tacos, right? It’s an easy recipe, what I like about it is that you just put everything together in a pot and then you just put it in the oven after.
