Vegetable Tian Over Brown Rice
Vegetable Tian over Brown Rice is a healthy dinner or lunch for you to prepare your loved ones. It is great with a cup of coffee or a big glass of tea. Yum! I love this dish and I think is has become a family favorite! Everyone in my household has tried to eat healthier and this dish is a tasty way of doing so. So raise your cup of coffee or tea and enjoy this dish with your favorite people!
Ingredients:
1 tbsp olive oil
1 medium sweet onion
1 tsp minced garlic
1 medium yellow squash
1 medium zucchini
1 thyme
salt and pepper to taste
1 cup of Italian or Parmesan Cheese
1 medium tomato
1 medium potato
Pam Spray
Directions:
Preheat your oven to 400 degrees. Finely chop your sweet onion and mince the garlic. In a large frying skillet, you will add your olive oil and saute the onion and garlic together until softened.
Wash your vegetables and slice thin. Spray your cooking dish(medium sized) with Pam Spray. Spread the garlic and onion mixture on the bottom of the dish. Place your vegetables vertically alternating vegetables. Sprinkle salt, pepper and thyme on top.
Cover your baking dish with foil and bake for 25 to 30 minutes until vegetables start getting soft. Remove your foil and add your Italian or Parmesan cheese to the top and place back in the oven to cook for about 10 to 15 minutes more. The cheese will be a beautiful golden brown when done.
